Kale with Sesame Seeds

1/4 cup sesame seeds 
1 pound kale, stems removed, coarsely torn into pieces 
1/2 tablespoon sesame oil 
1 slice gingerroot 
1 clove garlic, minced 
2 tablespoons balsamic vinegar

Directions 
Toast the sesame seeds in a dry skillet over medium heat until they color and start to pop, about 2 minutes. Transfer the seeds to a sheet of waxed paper. Cover with another sheet of waxed paper and use a rolling pin to crush them. Set aside. Bring a small pot of water to a boil over high heat. Place the kale in a steamer basket and lower into the pot of boiling water for 2 minutes to cut the bitterness and bring out the brilliant color, or cook in a microwave until tender. Drain and reserve. Heat the sesame oil in a 2-quart sauté pan over medium heat. Add the ginger and garlic and sauté for about 2 minutes. Add the kale and stir to coat. Cover and cook for 3 to 5 minutes or until the kale is soft. Top with the toasted sesame seeds. Place in a serving bowl and add the balsamic vinegar. 


Stuffed Acorn Squash

1/2 cup unsweetened applesauce 
1 teaspoon light brown sugar 
1/2 teaspoon ground cinnamon

Directions 
Cut the squash in half lengthwise, scoop out the seeds, and place the halves, cut side down, in a casserole dish. Pour the water around the squash and cover the casserole tightly with a lid or plastic wrap. Microwave on high for 10 minutes. Meanwhile, in a small bowl, combine the applesauce, brown sugar, and cinnamon. Remove the cover, turn the squash cut side up, and divide the applesauce mixture between the centers. Microwave, uncovered, for an additional 5 minutes or until the squash is tender. The squash can be served as is or scooped out and served in a bowl. 


Sweet-Potato Chips

Directions 
Preheat the oven to 350 degrees. Cut the sweet potato into very thin slices. Spray a sheet pan with nonstick cooking spray. Lay the sweet potato slices on the sheet pan and spray the top of the slices with cooking spray. Bake for about 25 to 35 minutes or until lightly browned. Cooled at room temperature, the sweet-potato chips will turn crispy.
