Directions 
Preheat the oven to 375 degrees. Spray an 8 x 8 inch baking pan with cooking spray. In a bowl, thoroughly combine the oatmeal, flour, brown sugar, cinnamon, nutmeg, and margarine. Peel, core, and thinly slice the apples. Spread the apple slices evenly over the surface of the baking pan. Sprinkle the oatmeal-flour mixture over the apples. Bake in the preheated oven for 30 minutes or until the apples are tender and the topping is golden brown. Serve warm, topping each serving with 1/4 cup frozen yogurt. 


Low-Calorie Walnut Brownies

Directions 
Preheat the oven to 350 degrees. Spray an 8 x 8 inch baking pan with cooking spray. In a large heatproof bowl set over simmering water, melt the chocolate with the hot water, stirring until smooth. Remove from the heat and let cool slightly. Whisk in the egg whites and mix in the vanilla. In a separate bowl, mix together the sugar, flour, and baking powder; stir into the chocolate batter until just combined. Stir in the walnuts. Pour the butter into the cake pan. Bake for 20 to 30 minutes or until the edges pull away from the pan. Let cool on a rack, and then serve. 


Sweet Potato Pie

1/4 cup evaporated skim milk 
1 teaspoon vanilla extract 
3 cups cooked, mashed sweet potatoes (from about 2 medium potatoes)

Directions 
To make the crust, in a large stainless steel mixing bowl, combine the flour and sugar. Add the milk and oil and stir with a fork until well mixed. Turn the mixture out onto a floured work surface and knead it into a smooth ball. Roll out the dough to a thickness of 1/4 inch and place in a 9-inch pie pan, patting to spread evenly. Preheat the oven to 350 degrees. To make the filling, in a large stainless steel mixing bowl, combine the sugars, salt, nutmeg, and egg substitute. Add the milk and vanilla and stir to incorporate. Add the sweet potatoes and mix well using an electric mixer. Pout the mixture into the pie shell. Bake for 1 hour or until the crust is golden brown. Cool and cut into 16 small slices, making a rich, dense dish.
